Goldeneye Savory Sausage Flatbread

Created by Goldeneye Winery Hospitality Head Alexis Eich for the Tidrick, this flatbread version of pizza pairs perfectly with Pinot Noir, especially the 2019 Pinot Noir, Confluence Vineyard, which you overlook when sitting on Goldeneye’s stunning terrace. Little known fact: the same vineyard has a small bit of Gewurztraminer planted on it (definitely try this wine) and, if viewed from above, takes on the distinctive shape of a duck! They are all about ducks at the Duckhorn family of wineries.

Ingredients:

  • Naan style flat bread (or other dough – pre-made bread helps on busy days)
  • Roasted garlic
  • Truffle and olive oils
  • Mozzarella and parmesan cheese
  • Mix of sweet and spicy Italian sausage
  • Crimini mushrooms sauteed slowly in butter 
  • Caramelized Red onion
  • Thyme

Spread roasted garlic on the flat bread
Drizzle truffle and olive oil
Drop on morsels of sausage
Place mushrooms and onions strategically
Cover with cheeses
Sprinkle thyme over finished pizza
Bake in woodfire oven for just a few minutes
