Born in Peru to a Spanish Mother and Sicilian Father, Chef Victor’s training and work took him around the world, including working alongside some of the worlds most renowned chefs, including Paul Bocuse, Edward Merard and Ferra Adria. Having owned big and small restaurants, Chef Victor highlights and elevates the beauty of fresh, local Mendocino bounty. His wife Melissa Boone is a Sommelier and responsible for curating the hyper-local wine list, along with creating pairing menus for guests.

Roundman’s
Smokehouse and Butcher Shop
Co-owned by a Silicon Valley ex-aerospace instructor and an ex-private chef, the combination is perfect for smokehouse butcher culinary creativity. Roundmans is Mendocino’s only family-owned and operated smokehouse, producing and selling gourmet smoked fish, all natural meat and cheese, and offering an extensive fresh meat selection and smoked sausages for over 20 years.
Committed to sourcing from farmers who employ the highest quality of naturally raised, hormone and antibiotic-free farming practices, and they employ a no-added-nitrate approach to almost all of our smoked products. Roundmans is one of the few remaining North Bay family-owned USDA custom processing butchers.
